Jamaican Oxtail Stew

Traditionally made with slow-cooked oxtail, it combines a variety of spices and vegetables, creating a hearty and flavorful meal. This dish is often enjoyed during family gatherings and special occasions, showcasing the warmth and hospitality of Jamaican culture. Today, it has gained popularity beyond Jamaica, appearing on menus worldwide as a comforting and delicious option.

Bouillon is a cost-effective way to add flavor.
Wash oxtail twice in vinegar, salt, and lime; set aside.
Season oxtail with salt and black pepper; add to a bowl with chopped shallots, garlic, onions, ginger, green onion, scotch bonnet, and thyme.
Add 1.5 tablespoons of black pepper, 2 tablespoons of paprika, 1 tablespoon of hot chili powder, 1.5 tablespoons of ground coriander, and 1 tablespoon of salt to the oxtail mixture.
Pour in 0.5 cup of soy sauce and 2 tablespoons of browning sauce; mix well to combine.
Let the oxtail marinate for at least 5 hours, preferably overnight.
In a pot, add 2 liters of water, onions, garlic, and ginger; bring to a boil.
Add the marinated oxtail to the pot; simmer on medium-low heat for about 20 minutes until it thickens.
Prepare rice by washing it three times; add 3 cups of rice to a pot with water up to the first knuckle of your finger.
Add coconut milk and salt to the rice; cook until rice is tender.
Add canned lima beans to the oxtail stew; stir and let simmer until everything is cooked through.
