Wash oxtail twice in vinegar, salt, and lime; set aside.

Season oxtail with salt and black pepper; add to a bowl with chopped shallots, garlic, onions, ginger, green onion, scotch bonnet, and thyme.

Add 1.5 tablespoons of black pepper, 2 tablespoons of paprika, 1 tablespoon of hot chili powder, 1.5 tablespoons of ground coriander, and 1 tablespoon of salt to the oxtail mixture.

Let the oxtail marinate for at least 5 hours, preferably overnight.

In a pot, add 2 liters of water, onions, garlic, and ginger; bring to a boil.
