Bouillon is a cost-effective way to add flavor.
Wash oxtail in salt water with vinegar and lime, keeping the lime inside for cleaning.
Blend together 1 onion, 1 bunch of thyme, 2 medium bunches of green onions, 1 piece of ginger cut in half, 6 Scotch bonnet peppers, and 1 bulb of garlic.
Add 2 tablespoons of soy sauce, 1 teaspoon of browning sauce, 1 teaspoon of all-purpose seasoning, 1 teaspoon of Maggie seasoning, and 2 tablespoons of crushed allspice berries to the blender.
Massage the marinade into the cleaned oxtail using gloves.
Let the oxtail marinate for one whole day.
Sauté the oxtail for about 10 minutes to start the cooking process.
If using a pressure cooker, add 500 mL of water to the oxtail, stir, and seal the lid.
Cook on medium heat in the pressure cooker for 1 hour.
In a separate pot, cook 2 cans of red kidney beans with 2 cups of water, 1/2 cup of coconut milk, a bulb of garlic, a few sprigs of thyme, and 2 teaspoons of all-purpose seasoning for 13 minutes after boiling.
Prepare 1 1/2 cups of long grain rice to cook separately.
After 1 hour, check the oxtail and allow it to simmer until tender, which may take 4-5 hours without a pressure cooker.
