Wash oxtail in salt water with vinegar and lime, keeping the lime inside for cleaning.

Blend together 1 onion, 1 bunch of thyme, 2 medium bunches of green onions, 1 piece of ginger cut in half, 6 Scotch bonnet peppers, and 1 bulb of garlic.

Add 2 tablespoons of soy sauce, 1 teaspoon of browning sauce, 1 teaspoon of all-purpose seasoning, 1 teaspoon of Maggie seasoning, and 2 tablespoons of crushed allspice berries to the blender.

Massage the marinade into the cleaned oxtail using gloves.

Let the oxtail marinate for one whole day.

Sauté the oxtail for about 10 minutes to start the cooking process.
