Today, variations can be found across the country, with some opting for different seasonings or sides, but the essence of the dish remains cherished by many.

Turn on the instant pot and select the sauté function.
Add 1 tablespoon of neutral oil to the pot and heat.
Add 1 diced white onion and cook until tender and lightly browned.
Add 1 tablespoon of tomato paste and cook for 20-30 seconds.
Deglaze the pot with 1/4 cup of red wine, stirring until reduced.
Add 3 cups of beef broth and 1 tablespoon of Worcestershire sauce.
Add 1 teaspoon of apple cider vinegar, 1 tablespoon of chopped parsley, 1/4 teaspoon of hot smoked paprika, 1/4 teaspoon of celery seed, 1/4 teaspoon of onion powder, and black pepper to taste.
Add 5 cube steaks, seasoned lightly with salt and pepper, to the pot.
Place a trivet upside down in the pot and add 2 large and 3 small peeled russet potatoes on top.
Close the lid and set to pressure cook on high for 20 minutes.
After cooking, perform a natural release for about 30 minutes.
Remove the potatoes and cube steaks from the pot.
Mix 4.5 tablespoons of cornstarch with 4.5 tablespoons of beef broth to create a slurry.
Turn on the sauté function again and stir in the cornstarch slurry to thicken the gravy.
Add the cube steaks back into the gravy and simmer to warm them up and thicken the gravy.
In a bowl, add 2 tablespoons of unsalted butter to the potatoes, season with salt and pepper, and cover to melt the butter.
Use a hand mixer to puree the potatoes, adding milk incrementally until desired consistency is reached.
