Add washed raisins to a pot.
Add dried prunes and dried apricots to the pot.
Add glazed pineapple cherries to the pot.
Pour in cherry brandy and mannishawitz cream red concord.
Cover the pot and simmer on low heat for 30 minutes to an hour.
Turn off the heat and let the fruits sit covered for about 12 hours.
Pulse the soaked fruits in a food processor to desired texture.
Cream together butter and brown sugar until fluffy, about 3 to 5 minutes.
Add eggs one at a time to the butter and sugar mixture.
Add lime zest, orange zest, vanilla extract, almond extract, and Angostura bitters.
In a separate bowl, mix flour with baking powder, cinnamon, nutmeg, and allspice.
Fold the dry ingredients into the wet mixture until fully incorporated.
Add 8 to 10 cups of the blended fruit to the mixture and fold in.
Line buttered pans with the cake mixture and add mixed peel if desired.
Bake at 225°F for 2.5 to 3 hours or until a toothpick comes out clean.
After baking, add more alcohol to the cake as it cools.
