It's a festive favorite, enjoyed by many across the Caribbean and beyond, with variations that include different fruits and spices.

Preheat the oven to 370°F (188°C).
Grease the baking pan thoroughly to prevent sticking.
In a bowl, mix 1 cup of brown sugar with 4 tablespoons of margarine until well combined and fluffy.
Add 6 large eggs one at a time, mixing well after each addition.
Prepare the dry ingredients: combine 2 cups of all-purpose flour, 2 teaspoons of baking powder, 1 teaspoon of ground nutmeg, 1 teaspoon of allspice, 1 tablespoon of ground cinnamon, and 1 teaspoon of salt in a separate bowl.
Gradually add the dry ingredients to the wet mixture, folding them in carefully.
Add soaked raisins and cherries to the mixture, which have been soaked in Jamaican white rum and wine for about 2 weeks.
Incorporate 1 tablespoon of vanilla extract and 1 tablespoon of lemon juice to the mixture.
Add Browning sauce to achieve the desired color of the cake, mixing well.
Pour the batter into the prepared baking pan, making sure to shake it gently to level the batter.
Bake in the preheated oven at 370°F for 1.5 hours, then check and reduce the temperature to 350°F (177°C) for an additional 30 minutes.
Once baked, let the cake sit for about 30 minutes before slicing.
Brush the cooled cake with additional Jamaican white rum and wine before serving.
