1 cup vegetable oil
1/4 cup chili flakes
1/4 cup red chili powder
2 tbsp. black peppercorns
2 bay leaves
3 star anise
3 cinnamon stick

Mix together red chili powder and red chili flakes in a bowl. Set aside.

Dry roast peppercorn, cinnamon, bay leaves and star anise.

In a small saucepan, heat the oil over medium-low heat. Add all the roasted spices and let them infuse for about 5-7 minutes.

Once the oil is hot (but not smoking), carefully strain and pour it over the chili mixture. You’ll hear sizzling as the oil brings out the flavors.

Allow the oil to cool down completely. Once cooled, transfer to a jar or container.
