Slice 1/2 lb of Cajun-style andouille sausage about 1/4 inch thick.

Chop the top and bottom off the red bell pepper, make a cut down the side, open it up, remove the seeds, and slice into thin strips.

Peel and smash 5 garlic cloves using the back of your knife.

Remove leaves from parsley stems, chop, and dice into small pieces.

Add olive oil to the sliced sausage and 1/2 lb of peeled and deveined shrimp, then sprinkle half of the Cajun seasoning on both and mix.

Bring a pot of water to a boil, add a little salt and olive oil, then add egg noodles and cook until tender but slightly firm to the bite, about 8 to 10 minutes.
