In a hot pot, add 2 teaspoons of oil and cook shrimp for 1.5 minutes; remove from pot.
Add 2 teaspoons of oil to the pot and sauté andouille sausage for 3-5 minutes until browned.
Add 4 tablespoons of butter to the pot and then add minced garlic; cook until fragrant.
Add chopped onion, red and yellow bell peppers, and shallots; cook for about 5 minutes on medium-low heat.
Pour in 2 cups of heavy cream and 1 teaspoon of low sodium chicken bouillon; stir to combine.
Add cajun seasoning and 3 sprigs of fresh thyme; stir well.
Lower heat and add gouda cheese, medium sharp cheddar cheese, and parmigiano cheese; stir until melted.
Add 2 tablespoons of honey mustard and black pepper; stir to combine.
Add cooked pasta to the cheese sauce and stir to coat evenly.
Add 2 tablespoons of sour cream and stir until combined.
Add shrimp back to the pot and cook for 3-5 minutes until shrimp is cooked through.
