Chop/dice bell peppers and parsley; set aside.

Bring 2 quarts of water, 1-2 tbsp cajun oil, and a pinch of salt to boil in a pot.

Add pasta and cook for 8-10 minutes; drain.

While pasta cooks, add 1-2 tbsp of cajun oil to a sauté pan on medium-high heat.

Add sausage to the pan and brown until crisp on both sides, then remove from the pan.

Add shrimp to the pan and cook until crisp on both sides.

Add yellow bell pepper and cook for 2-4 minutes until softened, then remove all from heat.

Mix together pasta, 4 tbsp cajun oil, sausage, shrimp, yellow bell pepper, green onion, and salt/pepper to taste.

Plate and add tomato and parsley garnish.
