Vegan Tofu Breakfast Burritos

2 tablespoon olive oil
1½ pound potatoes cut into small pieces
1 red onion chopped
2 cloves garlic minced
1 teaspoon oregano
8 spinach tortillas gluten free
2 ounce vegan cheddar cheese shredded
12 ounce tofu extra firm
⅓ cup vegenaise
1 tablespoon yellow mustard
¼ teaspoon cayenne pepper
1 teaspoon turmeric
2 tablespoon fresh parsley chopped
1 tablespoon dill chopped
2 tablespoon fresh cilantro chopped
2 green onions chopped
1 cup cherry tomatoes chopped
1 tablespoon lime juice
salt and pepper to taste
½ teaspoon salt or to taste
¼ teaspoon pepper or to taste

Heat olive oil in a 12-inch cast iron skillet over medium heat.

Add the potatoes and cook until tender, about 10-15 minutes.

Stir in the chopped red onion and minced garlic, cooking until the onion is translucent.

Add oregano and mix well.

In a bowl, crumble the extra firm tofu and mix with vegenaise, yellow mustard, cayenne pepper, turmeric, parsley, dill, cilantro, green onions, cherry tomatoes, lime juice, salt, and pepper to create the eggless 'egg' salad.

Warm the spinach tortillas in a separate pan or microwave.

To assemble, place some of the potato mixture and eggless 'egg' salad on each tortilla, then sprinkle with vegan cheddar cheese.

Roll up the tortillas to form burritos.
