2 teaspoons dry mustard

In a 5 to 6 quart sauce pot, heat 1 tablespoon of extra virgin olive oil over medium heat until hot.

Add 2 tablespoons of peeled and chopped ginger and 1 large chopped onion. Cook until the onion is golden and tender, about 10 minutes.

Add 3 tablespoons of chili powder and 3 minced cloves of garlic. Cook, stirring, for about 1 minute.

Add 1 (8 ounce) can of crushed pineapple with its juice and cook for about 1 minute longer.

Add 1 (28 ounce) can of crushed tomatoes with their puree, 1/3 cup of ketchup, 1/4 cup of cider vinegar, 3 tablespoons of dark brown sugar, 3 tablespoons of light molasses, 2 teaspoons of dry mustard, and 1 teaspoon of salt.

Using a KitchenAid immersion blender, puree the sauce until smooth.

Reduce the heat to medium-low and cook, stirring occasionally, until the sauce reduces to about 5 cups, about 25 minutes.

If not using the sauce right away, cover it and put it in the refrigerator. It will keep for about one week or up to two months in the freezer.
