Peel the plantain and wash it 2-3 times.
Transfer the plantain into a cooking pot, season with salt, and add water to cook.
Add a little bit of pepper to the pot with the plantain and cover to cook.
Grind some onions until smooth.
Chop fresh tomatoes and prepare to use them in the recipe.
Check on the plantain after 30 minutes; it should be soft.
Strain out the water from the plantain and set aside.
Grind the pepper with the onions until desired consistency is achieved.
Grind the roasted peanuts, adding a little water to ease the process.
Heat cooking oil in a pot and add chopped onions, frying for 1-2 minutes.
Add garlic and ginger paste to the onions and stir.
Add chopped tomatoes and cook on low-medium heat for about 10 minutes, stirring occasionally.
Add the ground ingredients to the pot and stir everything together.
Cook on low-medium heat for about 5 minutes.
Add 3 eggs (optional) and seasoning of choice, including shrimp powder, and stir.
Allow to cook until everything is well combined and ready.
