1 pack of chicken thighs (boneless & skinless)
1 pack of shrimp (medium)
2 & 1/2 cups of Arborio Rice
3 & 1/2 cups of water (or chicken broth)
1 can of fire roasted tomatoes
1/2 a onion (chopped)
1/2 a bell pepper (chopped)
Olive oil
Butter
Sazon with saffron
Garlic powder
Black pepper
Complete seasoning
Cajun seasoning
Salt
Paprika
Red pepper flakes
Parsley flakes

Heat olive oil and butter in a large pan over medium heat.

Add chicken thighs and cook until browned on all sides.

Stir in chopped onion and bell pepper; sauté until softened.

Add fire roasted tomatoes, garlic powder, black pepper, complete seasoning, Cajun seasoning, salt, paprika, and red pepper flakes; cook until fragrant.

Stir in Arborio rice, coating it in the oil and spices.

Pour in water (or chicken broth) and bring to a simmer.

Reduce heat to low and cook uncovered until rice is tender, about 15-20 minutes.

Add shrimp on top of the rice and cover; cook until shrimp is pink and cooked through.
