Heat olive oil in a large paella pan over medium heat until shimmering.
Add chicken and chorizo; cook until browned on all sides, about 5-7 minutes.
Stir in onion, garlic, and bell pepper; sauté until softened, about 3-4 minutes.
Add tomato, saffron, and paprika; cook for 2 minutes until fragrant.
Stir in rice, coating it in the oil and spices for 1-2 minutes.
Pour in chicken broth and bring to a simmer; season with salt and black pepper.
Reduce heat to low and cook uncovered for 15 minutes, without stirring.
Arrange shrimp, mussels, and squid on top of the rice; cover with a lid.
Cook for an additional 10-12 minutes, until seafood is cooked and rice is tender.
Remove from heat and let rest for 5 minutes, covered.
Garnish with peas, lemon wedges, and parsley before serving.
