Add 1.5 cups of Matiz paella rice to the pan and stir to combine with the sofrito.

Toast the rice slightly in the pan.

Spread the rice out in a single layer, not piled in the middle.

Pour in 4 cups of Annatto fish broth and bring to a boil.

Once boiling, reduce the heat to a simmer and do not stir the rice anymore.
