Drain a can of chickpeas and reserve 1 tablespoon of aquafaba.

Mash the chickpeas in a food processor, leaving some whole pieces.

Transfer the mashed chickpeas to a bowl and add the reserved aquafaba.

Add 1/2 cup vital wheat gluten, 1/3 cup breadcrumbs, 1 teaspoon poultry seasoning, a pinch of salt, a pinch of pepper, 2 teaspoons soy sauce or tamari, and 1/3 cup vegetable broth to the bowl.

Mix all ingredients together thoroughly, ensuring no dry ingredients remain.

Cover the mixture and chill in the refrigerator for about 1 hour.

Prepare a breadcrumb mixture with 1 cup breadcrumbs, 2 teaspoons garlic salt, and 2 tablespoons nutritional yeast in a separate bowl.

Use a burger press to form patties from the chilled mixture, or shape them by hand.

Coat each patty in the breadcrumb mixture and place them in an air fryer pan.

Air fry the patties at 400°F for 15 minutes, flipping halfway through, or bake in the oven for 30 minutes, flipping halfway through.

Assemble the burgers on buns with arugula, tomato, onion, and pickles, and serve with sweet potato fries.
