Peel one large cucumber and grate it on the large holes of a box grater.

Add the grated cucumber to a small bowl along with 200 grams of plain Greek yogurt.

Grate in two cloves of garlic using a rasp-style grater or mince it very finely.

Add about 30 mls of high quality extra virgin olive oil and stir to combine.

Cover the tzatziki sauce and refrigerate until ready to use.

In a small bowl, crack one large egg and add one tablespoon of high quality extra virgin olive oil, one tablespoon of tahini, and about one tablespoon of fresh lemon juice.

Add a teaspoon of ground cumin, a quarter teaspoon of chili flakes, half a teaspoon of salt, and some freshly ground black pepper, then whisk to combine and set aside.

Drain and rinse a can of chickpeas and add them to a large bowl.

Using a potato masher, mash the chickpeas until about three quarters are mashed, leaving some texture.

Dice half of a medium onion and add it to the bowl along with about 10 grams of parsley and one clove of garlic, minced or grated.

Pour the egg and tahini mixture over the chickpeas and mix until combined.

Sprinkle over about 40 grams of panko breadcrumbs and stir until just incorporated.

Divide the mixture into equal patties, rolling each into a ball and then flattening into a disk.

Add a tablespoon or two of olive oil to a skillet over medium-low heat.

Add the burger patties to the skillet and cook on one side until crisp and browned, about 5 minutes before flipping.
