Chickpea Burger

400 grams cooked chickpeas
2 cloves garlic
1 small red onion
25 grams plain flour
2 tablespoons fresh mint
2 tablespoons plain Greek yogurt
1 teaspoon ground cumin
1 teaspoon ground coriander
0.5 teaspoon chili powder
1 teaspoon smoked paprika
pinch ground white pepper
pinches dried parsley
pinches salt
juice of half a lemon
small amount of oil

Chop a couple of tablespoons of fresh mint and place in a bowl.

Add a couple of tablespoons of plain Greek yogurt to the mint and stir, then refrigerate.

Wash and drain a 400 gram tin of cooked chickpeas.

Crush the chickpeas until not too smooth.

Chop walnuts into very fine pieces and add to the crushed chickpeas.

Add 2 cloves of crushed garlic to the mixture.

Dice one small red onion and add to the mixture.

Add 25 grams of plain flour to the mixture.

Sprinkle in 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 0.5 teaspoon of chili powder, 1 teaspoon of smoked paprika, a pinch of ground white pepper, a couple of big pinches of dried parsley, and a couple of big pinches of salt.

Stir the mixture well and add the juice of half a lemon.

Gather the mixture together for a couple of minutes.

Divide the mixture into four pieces and shape into patties.

Cover the patties and refrigerate for an hour.

In a small amount of oil under low heat, fry the chickpea burgers two at a time for five minutes on each side until golden brown and hot in the middle.

Serve with the cool mint sauce.
