1 large egg yolk
1 tablespoon water
2 fresh jalapenos (seeds removed and thinly sliced)

Warm the milk over the stove to a temperature between 120 to 130 degrees Fahrenheit.

In the bowl of a stand mixer, combine the warm milk and granulated sugar, then sprinkle the yeast over top and let it sit for about 5 minutes until foamy.

Add the flour, melted butter, salt, and 2 cups of sharp cheddar cheese to the yeast mixture in the stand mixer.

Mix on low speed until combined, then increase to medium speed until the dough is smooth and pulls away from the sides of the bowl.

Lightly grease a large bowl with olive oil spray, form the dough into a ball, coat it in oil, cover with plastic wrap, and let it rise in a warm place for at least 1 hour until doubled in size.

Prepare a water bath by bringing 10 cups of water to a rapid boil and adding 2/3 cup of baking soda to it.
