1

Preheat the oven to 200 degrees Fahrenheit.

2

Prepare a 10 pound pork shoulder roast with the bone in and skin on.

3

Blend chipotle peppers in adobo sauce, sweetened condensed milk, ground cumin, dried Mexican oregano, ground clove, salt, pepper, and garlic infused canola oil together for 10 to 15 seconds to create a marinade.

4

Pour the marinade over the pork shoulder and rub it into the meat thoroughly.

5

Cut 1 onion in half and place the halves at each end of the roasting pan with the pork.

6

Cover the roasting pan and place it in the oven to bake at 200 degrees Fahrenheit for 12 hours.

7

After 12 hours, remove the pork from the oven and check for tenderness.

8

Cut the pork into portions to prepare for crisping.

9

Spread the pieces out and pour orange juice and coca-cola evenly over the top.

10

Add 2 bay leaves and return the pork to the oven, uncovered, at 350 degrees Fahrenheit for 30 minutes.

11

After 30 minutes, flip each piece of pork over and return to the oven for another 30 minutes until crispy.

12

Remove the pork from the oven and separate the meat from the liquid, saving the liquid to prevent dryness.

13

Heat up tortillas and double them up for serving.

14

Cut the meat into smaller bits and load them into the tortillas with green onion, cilantro, and salsa verde.
