Introduce the recipe and ingredients for Bajan Great Cake.
Add 2 cups of flour and 1 cup of granulated sugar (or brown sugar) to the mixing bowl.
Add 0.5 pound of butter to the bowl.
Add 5 eggs to the mixture, whisking them together first if preferred.
Add 1 teaspoon of lemon zest to the mixture.
Add 4 tablespoons of browning to the mixture, being careful not to add too much to avoid bitterness.
Add 2 teaspoons of baking powder, 1 teaspoon of cinnamon, 1 teaspoon of allspice, 1 teaspoon of nutmeg, and salt to taste.
Add a dash of almond extract and a dash of vanilla extract to the mixture.
Prepare the dried fruits by adding 0.5 pound of raisins, 0.5 pound of cherries, 0.5 pound of currants, and 0.25 pound of mixed peel to a container and cover with grape juice for 3 days.
After soaking, blend the fruits in a high-powered blender until incorporated.
Cream the butter and sugar together using a hand mixer on low speed until light and fluffy.
Add the eggs to the creamed mixture a bit at a time, ensuring they are fully incorporated.
Add the blended fruits to the batter and mix well.
Add the browning to the mixture and lightly mix.
Fold in the 2 cups of flour until just combined.
Prepare an 8-inch baking tray by greasing it and lining it with parchment paper.
Pour the batter into the prepared baking tray and smooth the top.
Preheat the oven to 325°F (160°C).
Bake the cake for about 2 hours, checking for doneness with a toothpick.
Once baked, prick the top and sides of the cake with a toothpick and pour additional grape juice or alcohol over it for preservation.
