Vinarterta is a traditional Icelandic cake that dates back to the 19th century, often associated with special occasions and holidays. This layered cake, filled with prune or almond filling, reflects the resourcefulness of Icelandic bakers using local ingredients. Today, it remains a beloved dessert, especially during festive gatherings, and has inspired variations across the globe.

Preheat the oven to 350°F (175°C).
Cream together 1 cup of butter and 1.5 cups of white sugar until light and fluffy using an electric mixer.
Add 2 eggs and 2 teaspoons of vanilla extract to the mixture and mix well.
Add 1 tablespoon of cardamom to the mixture and mix again.
Add 3 tablespoons of milk to the mixture and combine.
Sift together 4 cups of flour and 1 teaspoon of baking powder in a separate bowl.
Gradually incorporate the dry ingredients into the wet mixture until a dough forms.
Roll out the dough using a strong rolling pin and a macrame hoop to cut out seven 9-inch layers.
Place the layers on a parchment-lined baking sheet and bake for 7-8 minutes until golden.
Remove the layers from the oven and allow them to cool completely.
Stack the layers with about three-quarters of a layer of prune filling between each layer, starting with the strongest piece on the bottom.
Cover the assembled cake with aluminum foil and plastic wrap to let it age for at least four days before serving.
