Cut 600 g of ripe tomatoes in half and grate them using a box grater to separate the pulp from the seeds and skin.

Heat a wide casserole style pan over medium heat.

Pour in water to match the volume of the grated tomatoes and bring to a boil.

Add 200 g of Oro pasta to the boiling sauce and stir.

Season with salt and black pepper.

Cover the pan and simmer on medium heat for about 12 to 14 minutes, stirring regularly, until the pasta is tender.

Turn off the heat and add chopped parsley to the pasta.

Grate 40 g of halumi cheese into the pasta and stir to combine, adjusting with a little water if needed to keep it loose and elegant.

Drizzle with extra virgin olive oil and stir in for shine.
