Whole wheat flour adds more fiber and nutrients, while bread flour is often less expensive.

Store-bought options can be more accessible for beginners.
Measure 100 grams of sourdough discard into a bowl.
Add 250 grams of warm water to the bowl.
Add 20 grams of honey to the mixture.
Measure and add 2 and 1/4 teaspoons of instant yeast to the bowl.
Melt 1/4 cup of butter and add it to the mixture.
Add 500 grams of all-purpose flour to the bowl.
Add 1 and 1/2 teaspoons of salt to the mixture.
Mix all ingredients in a KitchenAid mixer on speed two for 6 to 8 minutes until dough is smooth and elastic.
Cover the dough with a warm wet tea towel and let it rise for 45 minutes to an hour.
Turn out the dough onto a surface and press it down.
Shape the dough into a loaf and place it in a greased 8.5 by 4.5 inch cast iron loaf pan.
Let the dough rise in the pan for about 30 minutes until it rises above the top of the pan.
Preheat the oven.
