Today, soft sourdough sandwich bread is a staple in many households, celebrated for its tangy flavor and chewy texture, making it perfect for sandwiches or toast.

Olive oil reduces saturated fat while keeping moisture.

Almond milk is lower in calories, while water keeps it dairy-free.
Add 1 cup of milk, 1 teaspoon of salt, and 1 tablespoon of honey into a bowl.
Add the active sourdough starter to the bowl and mix to combine.
Add soft butter (can use melted butter or olive oil) to the mixture and mix well.
Add bread flour to the mixture and combine until mixed together.
Knead the dough using a stand mixer with a dough hook on the lowest speed for about 12 minutes, stopping to take a 2-minute break if needed.
After kneading, check the dough consistency; it should be soft and smooth, not too sticky or tough.
Cover the dough and let it sit for about 45 minutes.
After 45 minutes, tuck the edges of the dough towards the center and flip it to form a smooth surface.
Cover the dough and let it rise on the counter for 4 to 5 hours.
After 5 hours, degas the dough and drag it through the sides of the bowl to form a smooth ball.
Cover the bowl and place it in the fridge overnight for slow fermentation (about 12 hours).
After 12 hours, flip the cold dough onto a lightly floured work surface and flatten it into a long rectangle using a rolling pin.
Fold 1/3 of the dough from both sides and roll it like a jelly roll, pinching the ends to seal.
Grease a loaf pan with butter and place the shaped dough inside.
Cover the dough with cling film and let it rise slowly for about 5 hours.
Preheat the oven to 375°F (190°C).
Bake the bread for around 35 minutes; check for doneness after 25 minutes.
If the top browns too much, cover it with aluminum foil to prevent over-browning.
After baking, remove the pan from the oven and demold the bread.
Brush the top with butter while still warm to soften the crust.
Let the bread cool completely before slicing.
