In the United States, it became particularly popular during the Gold Rush era, symbolizing nourishment and resilience. Today, soft sourdough sandwich bread is a staple in many households, celebrated for its tangy flavor and chewy texture, making it perfect for sandwiches or toast.

Olive oil reduces saturated fat while keeping moisture.

Almond milk is lower in calories, while water keeps it dairy-free.
Combine 400 G of water and 100 G of starter in a bowl.
Add 500 G of flour and 10 G of salt, mix until no flour remains and a shaggy dough forms.
Cover the dough and let it rest for 1 hour.
Perform the first set of stretch and folds, wetting hands and stretching the dough around the bowl, doing this 8 times.
Tuck the dough into a ball, cover, and let rest for 30 minutes.
Perform the first set of coil folds, pulling the dough up and tucking it under itself, then cover and let rest for 30 minutes.
Repeat the coil folds for a second time, cover, and let rest for another 30 minutes.
Perform the third set of coil folds, cover, and let rest for 30 minutes.
Complete the fourth set of coil folds, cover, and let rise until almost doubled in size.
Pre-shape the dough on a floured surface, tucking it into a ball and flipping it upside down, then let it rest for 20 minutes.
Shape the dough again and place it in a banneton basket upside down for proofing, letting it sit for another 20 minutes.
Cover and refrigerate the dough overnight.
Preheat the oven to 500°F for 30 minutes to an hour.
Dump the loaf onto parchment paper, flour it, and score the top.
Bake at 450°F with steam underneath.
