Store-bought options can be more accessible for beginners.
Mill hard white wheat and kimoot together.
Mill an extra cup of hard white wheat berries and set aside for adjustments.
Add hard white wheat, kimoot, sunflower lecithin, and vital wheat gluten to the bowl of a stand mixer.
Add 375 grams of water to the mixer bowl.
Add 130 grams of sourdough starter to the mixture.
Add 58 grams of unsalted butter and 30 grams of honey to the bowl.
Mix the ingredients with a paddle attachment for about 45 seconds until combined.
Let the dough rest for 30 to 45 minutes to allow the flour to absorb the liquid and develop gluten.
After resting, assess the dough for stickiness and add extra flour if necessary.
Cover the dough with a damp towel during the resting period.
