Whole wheat flour adds more fiber and nutrients, while bread flour is often less expensive.

Store-bought options can be more accessible for beginners.
Measure 65 grams of sourdough starter and ensure it is bubbly and active.
Combine 200 grams of warmed buttermilk and 100 grams of warm water in a bowl.
Add 12 grams of sugar and 15 grams of avocado oil to the liquid mixture.
Incorporate 400 grams of bread flour and 100 grams of all-purpose flour into the mixture.
Add 9 grams of sea salt and mix loosely with hands.
If the dough is too thick, add a couple of tablespoons of water to help combine.
Let the dough sit for 30 minutes to absorb moisture.
After 30 minutes, knead the dough gently until it forms a cohesive ball.
Oil the dough to prevent crust formation and cover it for 12 to 18 hours at room temperature.
Shape the dough into a loaf after the first rise.
Place the shaped dough into a 9x5 loaf pan lined with parchment paper.
Cover the loaf with a damp tea towel and let it rise for 6 to 8 hours until doubled in size.
Preheat the oven to 400°F.
Bake the bread for about 40 minutes, checking for an internal temperature of 180 to 200°F.
Cool the bread completely for one hour before slicing.
