Measure all ingredients into a bowl.
Set the mixer on low or stir to knead for about 10 minutes.
Transfer the dough to a bowl for the bulk rise.
Perform stretching folds every 30 minutes for the first 2 hours of the bulk rise.
Let the dough rise for about 10.5 hours until nice bubbles form.
Roll up the dough and tuck in the edges to shape it for the loaf pan.
Let the shaped dough sit out until it reaches the top of the pan, then refrigerate overnight.
Preheat the oven and prepare to bake the bread.
Bake the bread with steam for the first half of the bake by placing a dish with water in the oven.
After the first half, remove the dish with water and continue baking without steam.
Remove the bread from the oven and let it cool before slicing.
