1

Start by preparing the ingredients: dark soy sauce, coriander leaves, salad, thinly sliced chicken breasts, Spanish onion, half of a lemon, bean sprouts, bok choy, Hokkien egg noodles, baby corn, chili (optional), ginger, garlic, peppercorn, sesame oil, salt, and canola oil.

2

Marinate the chicken by pouring half of the dark soy sauce into it and mixing well. Set aside.

3

Heat canola oil in a pan. Once hot, sear the chicken on both sides until cooked, then set aside.

4

In a deep-frying wok, add oil and heat it up.

5

Start frying the garlic and ginger in the hot oil.

6

Add the sliced onions and chili to the wok.

7

Next, add the bean sprouts and stir-fry.

8

Pour in the oyster sauce and the remaining dark soy sauce, mixing well.

9

Add the baby corn and stir to combine, ensuring everything gets a good color.

10

Add the bok choy, making sure not to fully cook it so it remains crunchy.

11

Season with salt and pepper, mixing well.

12

Add the previously cooked chicken back into the wok along with the Hokkien noodles, mixing to ensure the noodles are evenly coated with sauce and color.

13

Squeeze the juice of half a lemon into the mixture for tangy flavor, and mix well.

14

Finish by adding the coriander leaves and mixing everything together before serving.
