Southern Smothered Turkey Wings and Gravy

Mix together kosher salt, granulated garlic, smoked paprika, black pepper, red pepper flakes, ground sage, and Grand Diamond all-purpose seasoning to create a spice mix.
Cut 4 pounds of turkey wings at the first and second joint and season them with the spice mix.
Dredge the seasoned turkey wings in about 1 cup of all-purpose flour, tapping off the excess flour.
Heat 3-4 tablespoons of vegetable oil in a 7-quart cast iron enamel Dutch oven and brown the turkey wings on all sides for about 3-4 minutes each side.
Remove the oil from the pot, remeasuring to ensure only 1/4 cup remains.
Add chopped celery, bell pepper, and onion to the pot and sauté for about 5 minutes until softened.
Add 1/3 cup of all-purpose flour to the vegetables and stir to create a roux, cooking until browned.
Stir in 1.5 teaspoons of Italian seasoning and about 1/2 teaspoon of the earlier spice mix.
Add sliced garlic and sauté for another minute before whisking in low-sodium chicken stock until smooth.
Cook the mixture at 350 degrees in the oven for about 2 hours, or transfer to a crock-pot and cook on high or low for the suggested times.
If the gravy is too thick, remove turkey wings and whisk in more hot chicken stock to thin it out.
