Fill a pot with water almost to the top.

Rinse the red beans to remove dirt.

Add 1 scallion and 1 teaspoon of minced garlic to the water.

Bring to a boil, then reduce heat to number 2 and slow cook until beans are tender.

Separate cooked beans from the liquid, reserving some liquid for later use.

In a pot, heat grapeseed oil and add epis and minced garlic.

Fry the beans in the oil for a few minutes to pick up flavors.

Season the beans with sea mushroom seasoning, all-purpose seasoning, and black pepper.

Add coconut milk to the beans and allow to cook for 1-2 minutes.

Use the reserved bean cooking liquid to add to the pot.

Wash the parboil basmati rice 3-4 times until water is clear.

Add the washed rice to the pot with the beans and liquid, along with the scotch bonnet pepper.

Allow the liquid to reduce until rice is visible before covering with a lid.

Cook rice for about 25 minutes, then fluff and remove the scotch bonnet.
