Preheat the Ninja Foodi on sear mode for 5 minutes.

Add 1.5 pounds of flank steak to the Ninja Foodi.

Add 2 cloves of garlic, 0.5 teaspoon of salt, a little olive oil, and 2 cups of water to cover the meat.

Seal the lid and set to pressure cook on high for 20 minutes.

After 20 minutes, perform a quick release and open the lid.

Remove the flank steak and let it cool before shredding it.

In the Ninja Foodi, add a little oil and sauté half a red bell pepper, half an onion, and 1 clove of garlic until the onions are see-through.

Pour in 1 cup of the liquid from the cooked meat, 0.5 cup of peeled plum tomatoes, cumin, oregano, garlic powder, onion powder, and fresh pepper, and mix well.

Continue to sauté until the vegetables are softer, about 1 more minute.

Add the shredded meat to the vegetable mixture gradually.

Pour in another cup of the liquid from the cooked meat and mix.

Add a third cup of the liquid from the cooked meat, 0.25 teaspoon of salt, and mix again.

Add red wine, a bay leaf, and another 0.5 cup of peeled plum tomatoes.

Let it cook for 10-15 minutes on sear/saute until the liquid reduces and thickens.

Add a little sazon with culantro and achiote for color.

Add a little brown sugar to balance the flavors and mix well.
