Jollof Rice is a beloved West African dish, particularly in Nigeria, where it is often served at celebrations and gatherings. The dish symbolizes unity and festivity, with each family having its own secret recipe. While variations exist across the region, the core elements of rice, tomatoes, and spices remain constant. Today, Jollof Rice has gained international acclaim, often featured in culinary festivals and competitions, showcasing its rich flavors and cultural significance.

long-grain rice

Jalapeños offer heat with easier availability.
Season goat meat with onion, beef bullion cubes, and salt, then add a little water and cover to steam on low heat for 15 minutes.
Add more water and cook for an additional 20 minutes until the skin is soft.
Remove the meat and check the meat stock for bones, filtering if necessary.
Wash rice several times until the water runs clear, then add to the pot with additional water and salt, cooking for 20-25 minutes.
Blend bell peppers, scotch bonnet peppers, and onion into a rough mix and set aside.
Prepare dried catfish by soaking in boiling water for 20-30 minutes, then debone and soak again if necessary.
Heat palm oil and add chopped onions and crefish powder, frying for 2-3 minutes until soft.
Add part of the pepper mix and season with salt and beef seasoning cubes, frying until it darkens in color (5-10 minutes).
Add dried fish and prawns, stir-frying for 1-2 minutes, then cover and cook for 5 minutes.
Add cooked rice to the mixture and stir until combined, then stir-fry for 5 minutes for a fried rice feel.
Add any leftover vegetables and mix well before serving with peppered goat meat.
