Vegetable Chowmein

1 cup bok choy, chopped
1 cup cabbage, shredded
1 cup broccoli, chopped
1 cup green beans, trimmed and cut
1 cup carrots, julienned
200g chow mein noodles
1/2 cup onions, sliced
1 cup bell peppers, sliced
2 cloves garlic, minced
1/2 inch ginger, grated
2 tbsp sweet dark soy sauce
2 tbsp light soy sauce
1 tbsp hoisin sauce
1 tbsp oyster sauce (optional)
1/2 tsp black pepper
1/2 tsp Chinese five spice
1 tbsp cornstarch
1 tbsp vegetable oil
1 tsp sesame oil
2 green onions, chopped

Prepare all ingredients: bok choy, cabbage, broccoli, green beans, carrots, Chow Mein noodles, onions, bell peppers, garlic, and ginger.

In a bowl, mix together the sauces: sweet dark soy sauce, light soy sauce, hoisin sauce, oyster sauce, and black pepper. Add 1 teaspoon of cornstarch to the mixture and stir well.

Boil a large pot of water and add the Chow Mein noodles. Boil for about 10 minutes without adding salt, then drain and rinse with cold water to stop the cooking process.

In a preheated wok, add vegetable oil and sesame oil. Allow it to heat up.

Add the aromatics (onions, bell peppers, garlic, and ginger) to the wok and sauté for about 2-3 minutes.

Add the vegetables that take the longest to cook first: green beans, carrots, and broccoli. Mix well and cook for about 2-3 minutes.

Add the leafy vegetables (cabbage and bok choy) to the wok, cover, and allow them to wilt slightly.

Add black pepper, Chinese five spice, and a bit of the sauce mixture to the vegetables. Toss and cook for about 1 minute.

Add the boiled noodles to the wok along with the remaining sauce mixture. Toss everything together until fully combined.

Finish by adding fresh green onions, toss again, and serve.
