Vegetable Chowmein

200g chow mein noodles
1 cup mixed vegetables (carrots, bell peppers, broccoli)
2 tbsp soy sauce
1 tbsp oyster sauce (optional)
1 tsp sesame oil
2 cloves garlic, minced
1/2 inch ginger, grated
2 green onions, chopped
1 tbsp vegetable oil
1/2 tsp salt
1/4 tsp black pepper

Cook the chow mein noodles according to package instructions. Drain and set aside.

In a large pan or wok, heat the vegetable oil over medium-high heat.

Add the minced garlic and grated ginger, sauté for about 30 seconds until fragrant.

Add the mixed vegetables to the pan and stir-fry for 3-4 minutes until they are tender but still crisp.

Add the cooked chow mein noodles to the pan with the vegetables.

Pour in the soy sauce, oyster sauce (if using), sesame oil, salt, and black pepper. Toss everything together until well combined and heated through.

Add the chopped green onions and stir-fry for another minute.

Taste and adjust seasoning if necessary.

Remove from heat and serve hot.
