Vegetable Chowmein

100 gm boiled noodles or spaghetti noodle
2 medium boiled potatoes
1/2 cup boiled chana
1 cup cabbage (thinly sliced)
1 medium onion (thinly sliced)
1 medium carrot (chopped)
1/2 capsicum (sliced)
chillies as needed
1 tbsp garlic (finely chopped)
1/2 tsp cumin powder
1/2 tsp black pepper powder
1 tbsp soy sauce
chilli powder as needed
salt to taste
2-3 tbsp vegetable oil

Heat 2-3 tbsp of vegetable oil in a pan.

Add 1 tbsp of finely chopped garlic and sauté.

Add thinly sliced onion and sauté until translucent.

Add boiled chana and boiled potatoes; cook for 2-3 minutes.

Add thinly sliced cabbage, chopped carrot, sliced capsicum, and chillies; mix well.

Do not overcook the vegetables.

Add salt, cumin powder, black pepper powder, chilli powder, and soy sauce; mix well.

Add boiled noodles and mix everything well together.

Garnish with green onion or green garlic if desired.

Local style Nepali chowmein is ready.
