Cut off the top and bottom of the red onions and peel them.
Slice the onions in half and use a mandolin to slice them thinly.
In a smaller bowl, combine salt and sugar.
Add 1.5 cups of apple cider vinegar to the bowl and mix until dissolved.
Add 3.5 teaspoons of whole black peppercorns to the mixture.
Pour the mixture over the sliced onions in a larger bowl.
Fill the bowl with water until the onions are submerged.
Cover the bowl and let it sit for an hour before refrigerating.
