Slice red onions as thinly as possible and soak them in water to reduce fumes.
In a small saucepan, add 3 tablespoons of extra virgin olive oil while the pan is still cool.
Add the soaked onions to the saucepan.
Saute the onions over medium heat until they become soft and tender, stirring occasionally.
Season the onions with 2 tablespoons of clear distilled vinegar, adjusting to taste.
Add salt and adobo seasoning to taste, stirring to combine.
Add 1 teaspoon of black pepper and continue to cook until the onions are soft but still retain some texture, about 10 to 15 minutes.
Once done, remove from heat and let cool before serving.
