Thai Chili Pickled Onions That Transform Every Meal

Cut 3 whole onions through the middle and slice them thinly.

Set the sliced onions aside.

Juice 4 organic lemons to get 1.5 cups of lemon juice, straining out the pulp and seeds.

Chop 3 tablespoons of cilantro leaves and add them to the lemon juice.

Smash and dice 3 garlic cloves, then add them to the lemon juice.

Add 2 tablespoons of olive oil, 1 teaspoon of black pepper, and 1 teaspoon of salt to the lemon juice mixture, adjusting salt to taste.

Remove the stems from the Thai chilies, wear gloves, and chop them.

Blend the chopped Thai chilies in a food processor until smooth.

Add the blended Thai chilies to the lemon juice mixture and mix well.

Pour the lemon juice mixture over the sliced onions, ensuring the onions are submerged.

Taste the mixture and adjust salt if necessary.

Transfer the mixture to a disinfected jar and let it rest overnight in the fridge.
