Whole wheat flour increases fiber content.
Boil 1 pound of corn kernels with 1 tablespoon of salt for 1 hour and 20 minutes on medium heat, stirring occasionally to prevent sticking.
After boiling, strain the corn but do not discard the water.
Puree half of the boiled corn in a food processor for 1-2 minutes until smooth, then transfer to a bowl.
Puree the other half of the corn and add it to the bowl with the first half.
Do not add any liquid from boiling unless the mixture feels dry.
Roll out the corn mixture to about 1/4 inch thick using a cup as a cutter to form tortillas.
Shape the tortillas by cutting them into rounds with the cup and place them aside.
Heat vegetable oil in a skillet over medium-high heat.
Fry the tortillas for about 5-6 minutes on one side until crispy, then flip them over and fry for another 5-6 minutes until crispy on both sides.
Ensure the tortillas are crispy on the outside and soft on the inside.
