Melt 1/2 cup unsalted butter and 110 grams bittersweet dark chocolate together until fully melted and smooth.
Set the melted chocolate and butter mixture aside to cool.
Ensure the eggs are at room temperature; if not, place them in warm water for 5 minutes.
Crack 2 large eggs into a mixing bowl and add 1/3 cup brown sugar and 2/3 cup white sugar.
Add 1 1/2 teaspoons vanilla extract to the egg mixture.
Using a stand mixer with a whisk attachment, beat the mixture for 5 minutes until thick and fluffy.
Temper the cooled chocolate mixture by adding a small amount to the egg mixture, then fold in the rest gently to avoid deflating the volume.
Sift together 1/2 cup all-purpose flour, 1/3 cup unsweetened cocoa powder, 1 teaspoon baking soda, and 1/2 teaspoon salt into a bowl.
Whisk the dry ingredients while sifting to ensure a smooth mixture.
Add all the dry ingredients to the wet mixture at once and stir until just combined.
Chop 110 grams of bittersweet chocolate into chunks (about 2/3 cup) and gently fold into the batter.
Refrigerate the batter for at least 1 hour to prevent spreading during baking.
Use a cookie scoop to portion out the dough onto a baking sheet.
Preheat the oven to 350°F (175°C) and bake the cookies for 10 to 12 minutes.
Let the cookies sit on the baking sheet for at least 2 minutes after baking to set up before transferring them to a cooling rack.
Optionally, sprinkle sea salt on top of the cookies before serving.
