In a large bowl, add the sugar, 3 eggs, and 2 teaspoons of instant coffee and whip until well mixed.
In a double boiler, melt the chocolate and butter, stirring for about 5 to 8 minutes until completely melted.
Add the melted chocolate and butter mixture to the sugar and egg mixture.
Add all-purpose flour, baking powder, and salt to the mixture and continue mixing until combined.
Add chocolate chips to the batter.
Using an ice cream scooper or cookie dough scooper, transfer the cookie dough onto a pan.
Bake the cookies at 350°F; for large cookies, bake for about 15 to 17 minutes, and for smaller cookies, bake for about 13 to 15 minutes.
After baking, let the cookies cool on the cookie sheet for about 2 minutes before transferring them to a cookie rack.
