Desiccated coconut is easier to find and store.

Cut the coconut out of the shell and cube it very small.

In a Dutch pot, bring 4 cups of water to a boil.

Add the cubed coconut to the boiling water.

Add 1 tablespoon of grated ginger and 2 cups of brown sugar to the pot.

Simmer the mixture on low heat for about 30 to 40 minutes until it reaches a syrupy consistency.

Stir occasionally to prevent sticking or burning.

Once the mixture has reduced and thickened, add a little vanilla extract.

Scoop the mixture onto a baking tray lined with foil, allowing it to cool and dry completely before serving.
