Add 1 cup chopped pecans to a mixing bowl.
Add 1 cup sugar, 1/4 cup vegetable oil, 1 tablespoon flax seeds powder, 1 teaspoon vanilla extract, 1 teaspoon baking soda, and 1 teaspoon salt to the bowl.
Mix all the dry ingredients together.
Mash ripe bananas in a separate bowl.
Add the mashed bananas to the dry mixture.
Mix everything well until combined.
Preheat the oven to 350°F (175°C).
Add less than 1/4 cup of milk to adjust the consistency of the dough.
Combine the banana mixture with the dry ingredients; do not over mix.
Spray a loaf pan with cooking spray.
Pour the mixture into the prepared loaf pan.
Place the loaf pan in the oven at 350°F for about 45 to 60 minutes.
Check if the bread is done by inserting a toothpick; it should come out clean.
Let the bread cool on a wire rack for about 10 minutes before serving.
