Gullah Crab Rice

1 cup uncooked long grain white rice
2 cups vegetable broth or stock
1 large yellow or white onion, diced
1 stalk celery, diced
1 medium green bell pepper, diced
1 garlic clove, minced
1 large tomato, diced
2 tablespoons unsalted butter
1 tablespoon canola or vegetable oil
1 pound blue claw crabmeat
2 generous pinches seafood seasoning
Chopped fresh parsley, for garnish

In a medium saucepan over high heat, add in the vegetable broth (or stock) and the rinsed rice and bring it to a boil.

Reduce the heat down to low and let the rice simmer for 15 to 20 minutes until all the liquid absorbs.

Fluff up the rice with a fork, remove from the burner and set aside.

In a large skillet over medium-high heat, add in the 2 tablespoons butter and the oil until the pan gets hot and the butter melts.

Add in the holy trinity (onion, celery, and bell pepper), and the garlic, sprinkle some kosher salt on top; sauté until the vegetables are tender and translucent about 5 minutes.

Next add in the crabmeat and seafood seasoning to the vegetables and continue to cook for another 5 minutes until the crabmeat has browned.

Add and stir in the cooked rice and diced tomato.

Cover the pan and let it simmer for 5 minutes until the rice is fluffy.

Remove from the heat and pour the crab rice into a bowl, garnish with chopped parsley, serve and enjoy!!
