Pecan Bars

2 sticks butter (224g) browned
100g sugar
1 tsp vanilla extract
1/2 - 1 tsp salt
270g all-purpose flour
1 tsp cinnamon
1/2 tsp nutmeg
1 stick butter (112g)
100g brown sugar
120g maple syrup
30g heavy cream
1/2 tsp cinnamon
1/2 tsp salt
2 eggs
300g chopped pecans

Brown the butter and let it cool for 10-15 minutes.

Mix in the other ingredients for the crust and spread out evenly onto a 9x13 deep baking tray.

Bake at 350°F for 15-20 minutes depending on how crunchy you want the crust.

Melt the butter for the filling and add the brown sugar, maple syrup, and cream, bringing it to a boil.

Whisk the eggs in a separate bowl.

Temper the eggs by ladling in some of the hot mixture while whisking.

After ladling in about 1/2 cup of the hot mixture into the eggs, add the egg mixture back into the main mixture.

Add the chopped pecans and pour the filling over the crust.

Bake at 350°F for 30-35 minutes.

Cool for an hour or two, slice into bars, and enjoy.
