Tripas

Cultural Context

Tripas, or beef tripe, is a traditional Mexican dish often enjoyed in tacos. Originating from the necessity to utilize all parts of the animal, tripas have become a beloved street food, especially in regions like Mexico City. The dish is celebrated for its rich flavor and satisfying texture, often served with fresh toppings like onion and cilantro. Today, tripas are enjoyed not only in Mexico but also in various Latin American communities worldwide, showcasing the adaptability of this humble ingredient.

1

Clean the tripas under running water, about 12 inches long, rinsing out any gunk.

2

Fire up the Weber grill and place a bowl on it to start boiling the tripas.

3

Add about 1 cup of water to the bowl with the tripas to begin the boiling process.

4

Stir the tripas occasionally to prevent them from sticking to the bottom.

5

After about 1.5 hours, check the tripas as they reduce in size and become more tender.

6

Add lard to the tripas to help fry them up and make them crispy.

7

When the tripas start foaming, it's time to ladle out some of the liquid into a heat-safe container.

8

Continue to fry the tripas until they reach the desired crispiness, removing excess grease as necessary.

9

Transfer the cooked tripas to a skillet to keep warm while preparing the tacos.

10

Cut the tripas into small strips and serve on warmed flour tortillas with guacamole and cilantro.
