Order 3 lb of beef tripe, usually sold in packs at meat markets.

Clean the tripe by removing excess fat, using shears if necessary.

Run tap water through the inside of the tripe 3-4 times until the water runs clear.

Render the fat from the tripe in a pot over medium heat for about 1 hour, skimming off any foam that forms.

Boil water in a separate pot and add a few tablespoons of salt.

Once the water is hot, add the cleaned tripe and boil for 30-40 minutes until tender and shrunk.

After 20 minutes, skim off any foam from the boiling tripe.

Remove the tripe from the boiling water after 40 minutes and drain.

Heat the rendered beef tallow in a disco or skillet over medium heat.

Add the boiled tripe to the hot tallow and fry until crispy, about a few minutes, flipping occasionally.
