Make crab stuffing by combining lump crab, chopped onion, diced celery, red pepper, green pepper, and egg white in a bowl.
Add breadcrumbs, kosher salt, black pepper, and parsley to the mixture and mix well.
Squeeze in fresh lemon juice and mix again until incorporated.
Take tilapia fillets that have been cut in half and stuff them with the crab mixture.
Roll the tilapia fillets into a ball and secure with a toothpick or skewer if necessary.
Place the stuffed tilapia in a pan, season with kosher salt and cracked black pepper, and add a squeeze of fresh lemon on top.
Preheat the oven to 400°F (204°C).
Bake the tilapia for 6 to 7 minutes at 400°F.
Carefully remove skewers from the tilapia before plating.
